Apricot Hemp Trail Truffles
Ingredients
1 c dried organic apricots - (if these are very dry, soak in a little warm water first & use less water as noted below)
1 c raw organic cashews (also great subs here are walnuts for omega 3 or almonds for antioxidants + vitamin E etc)
3/4 c unsweetened organic coconut flakes + 1/4 c for rolling
2 T organic hemp hearts (or more if 'dough' is sticky)
Zest of 1 organic lime - (I like to use a microplane)
optional - I like to add cardamom or other spices and change it up with different types of citrus such as orange zest or lemon zest.
pinch Himalayan salt or mineral sea salt
1 T H20 (plus or minus)
Method
Add apricots to a food processor (such as Cuisinart) & blitz.
Then add all other ingredients (save the 1/4 c coconut for rolling) & blitz until well combined and chopped to desired consistency.
To a dish or bowl, add the 'rolling' coconut and set aside near the work surface.
Remove the container from the processor. Scoop the desired amount out to form your truffle (~1 heaping Tblspn at a time - & roll into bites, then roll in coconut. Scoop, roll, repeat.
Good to use parchment between the layers if you will be stacking the truffles.
Keep these in an airtight container in the fridge.
