Apricot Lime Energy Bites
These are great snacks to have on hand for those grab and go days!
Nutrient Dense / Vegan / Gluten Free / Nut Free / Dairy Free
Ingredients
1 c quick oats gf
1/4 c hemp hearts
1/2 c dried apricots
1/2 lime zest microplaned
1/4 c shredded coconut
1/4 c water
optional 1 T pure maple syrup for more sweetness
Method
In food processor, combine all ingredients but water and reserved 1 T cocont for rolling
After combined, slowly pour water while processor is running1 T at time. ‘Dough’ should be sticky/tacky but not runny.
roll into balls and then into coconut. Store in airtight container in fridge.
