The Coast Ridge Granola

READY IN 30 MINUTES!

Simple Granola recipe for the week ahead with honey, olive oil, oats, currants, pumpkin seeds and pecans, cinnamon + vanilla.  

Keep it simple with clean ingredients; nuts and seeds for protein and dried fruit & honey or maple for sweetness. 

I. Combine Dry

4 cups oats (regular or gluten free)

1/2 t cinnamon 

pinch sea salt

II. Combine Wet

in a separate bowl, whisk together:

1/2 c olive oil (or coconut oil melted)

1/2 c honey (or maple) 

1 t vanilla

III. Pour wet into dry

IV.  Mix in

2 C nuts + seeds (almonds, chopped pecans, pumpkin seeds...)

1 C dried fruit (currants, cherries...)

Spread on parchment lined baking tray

V. Bake 350 F

for 10 min then toss/twist tray and bake for another 10.

Cool completely before breaking

Store in mason jar up to 2 weeks
