Edamame Hummus

Edamame Hummus

So good and ready in a flash...this edamame hummus is a go to for dips and spreads.  Slather on a raw cracker, dip with veggies or add to your favorite wrap.

1/2 lb. or 1 1/2c frozen shelled edamame

1/4 c tahini

3 T fresh lemon or lime juice ~ approx 1 lemon

1/2 t fresh grated lemon or lime zest

1 clove garlic - smashed

1/4 t ground coriander

1/2 t ground cumin

3 T extra virgin olive oil

1 T chopped parsley or cilantro

1 T black sesame seeds

*optional ingredient: cayenne

Boil beans 4-5 min. Strain under cold water.

Place first 7 ingredients in food processor and puree. *if you would like a more creamy hummus, add 1/4 t water as well.   

While motor is running, slowly drizzle in extra virgin olive oil and mix.   

Transfer to a bowl and when ready to serve, stir in parsley or cilantro, drizzle with 1 T olive oil and top with black sesame seeds *Refrigerate covered up to 1 day
