Eat a diversity of plants!

Our microbiome & immune system are constantly shaping one another and our microbiomes are constantly changing with every food we put into our bodies. Our bodies absorb everything we eat and when we diversify the types of plants we consume, we are creating a stronger, healthier ecosystem within ourselves.

This bowl has over 15 different plants!

Ingredients

6-8 brussel sprouts - shaved

1 bunch kale - torn

1/2 cabbage - chopped

1 head chicory - torn

2-3 broccoli stalks - shaved with veggie peeler

mung beans - sprouted (see sprouting post)

1 T black sesame seeds

1/4 c pistachios

2 avocado - sliced

1 bunch asparagus - sauteed

1 bunch cilantro

4 pasture raised eggs - soft boiled

In a bowl, toss together first 5 ingredients. Place the mix in 4 serving bowls and arrange remaining ingredients on top. Drizzle with Ginger Lime Dressing and serve.

Ginger Lime Dressing:

1 -2 Limes (1/4 c fresh juice)

1 T coconut aminos

1 T apple cider vinegar

1 T fresh ginger - (about 1” knob) peeled and micro planed

2 T pure maple syrup

2 T toasted sesame oil

1 T shallot (optional) minced

In a bowl, whisk all ingredients together. Store in airtight container in fridge up to 5 days.
