Chia Flax Crackers with Pepita + Sesame


Easy to prepare with a satisfying crunch, these chia flax crackers are a versatile base to a range of herbs + spices.

These are nutrient dense, protein rich + the perfect vehicle for plant dips, spreads, soups & more.


 

Ingredients

½ c organic flaxseeds

3 T organic black sesame seeds

3 T organic white sesame seeds

3 T organic hulled pepitas – pumpkin seeds

3 T organic chia seeds

1c boiling H20

1 T organic thyme or herb mix dried or fresh chopped

Flaky sea salt - high quality mineral sea salt or Himalayan salt

Add herbs such as thyme, herbs Provence blend, kalamata olives; even everything bagel seasoning!

Method

Set the oven to 320F

In a bowl, whisk together seeds to combine. Add 1 c of hot water & let sit 15 minutes.

Lay a parchment piece on a baking tray. If using, gently stir in any herbs, olives, spices.

Using a spatula or back of wooden spoon, spread mixture thin and evenly over to form 11”x14” rectangle.

Sprinkle with flaky salt; bake 35-45 min or until crisp. Check halfway through to see if the pan needs to be turned/moved for an even bake.

Let cool completely & break into crackers.

Store in an airtight container.
