TANGY CABBAGE CARROT SLAW
snack, side or main to satisfy, this tangy cabbage carrot slaw is loaded with colorful veggies + satisfying crunch.
Ingredients
1 bunch organic rainbow carrots - julienned
1 organic medium head purple cabbage - sliced very thin
1 bunch organic radish - thin sliced
1 organic watermelon radish - thin sliced + quartered
1/2 c sliced organic green onions
optional ::
organic herbs :: dill, cilantro, parsley
organic Fuji apple - match sticked
organic Almond slivers/slices; organic black sesame seeds
organic fennel
In a large mixing bowl, toss all above ingredients together. When ready to serve, toss with tangy yogurt sauce (below).
Tangy Yogurt Sauce
2/3 c organic coconut yogurt (plain/Greek style / neutral flavor best)
1-2 lemons organic - fresh juice (about 2 T)
Zest of 1 lemon (about lemon micro planed)
1 T ACV (apple cider vinegar)
1 T raw honey (+- to desired taste)
Himalayan salt - pinch
fresh cracked pepper - to taste
1 t Dijon mustard (optional
Add all ingredients to a mixing bowl & whisk to combine. Store in airtight container in fridge to chill/firm up before tossing salad.
