Pomegranate Mint Pesto
This Pesto is a delicious addition to meals this time of year. Slather over grilled kuri and kabocha squash or dollop on your arugula salad or grilled veggies

ingredients
1 bunch fresh mint
1/4 c pomegranate seeds
juice of 1 lime + zest of 1/2 of the lime
1 T shallot minced
1 clove garlic
1/2 t honey
1-2 T nutritional yeast
1/2 c high quality olive oil
method
In a bowl, whisk honey with lime juice and micro plane zest into the mix.
To the bowl, add shallot, micro planed garlic and nutritional yeast, chopped mint, pomegranate seeds and olive oil then toss to coat and serve.
