Protein Jam Cookies

These plant-based Jam cookies have a shortbread like texture. Nutrient Dense cookies - Yes PLEASE! They are packed with fiber, protein and important minerals like immune boosting magnesium, zinc, vitamin E & calcium. Hemp seeds are considered a complete protein source, which means they provide all the essential amino acids and With just a touch of sweet, these are a treat that will sustain and satisfy. PLANT BASED / VEGAN / GF  

1 c Oats (Gluten Free for GF version) pulverized to make ‘flour’

1 c Almond Meal (plus more if needed) 

¾ c Hempseed (or sunflower seeds)

¼ c virgin coconut oil melted

¼ c extra virgin olive oil

¼ c maple syrup

Jam - raspberry, strawberry, apricot etc.

Oven 350

In a mixing bowl, combine 1st 3 ingredients.  In another bowl, whisk together melted coconut oil on olive oil and then add maple.  Pour liquids into dry ingredients and mix well until combined. Use a small ice cream scoop or roll into balls with hands and pace each on a tray.  Using your thumb or finger, make an imprint in the middle of each ball. Fill the hole with jam and bake for 20 min. Check and spin tray and bake another 5 min if necessary.  Let cool completely and enjoy; store in an airtight container.
